Beth Kimmerle's Candymonium: Quick Caramels

Beth Kimmerle chocolate and candy expert and historian, has served the confectionery industry as a writer and consultant. She has worked on projects in the U.S., Japan, Canada and Puerto Rico for clients from industrial to artisanal.

Beth is also the author of four books documenting the history of America's confectionery industry. She has been featured on the Food Network, History Channel, National Public Radio, NBC's The Today Show, and Martha Stewart Living.

When Beth is not musing about candy, she's making it. She's an instructor at the Institute of Culinary Education and appears regularly at the New York Chocolate Show. She's lectured at The Chicago History Museum, Princeton University and the University of Chicago.
